She had a full rich life. Birthing three children of which I am the middle one, sandwiched between two brothers. She never learned to drive a car but traveled from ocean to ocean on railway tracks until the trains stopped going where she wanted to go.
She loved people and they loved her in return. Laughter was her medicine for everything. If she fell down, she would laugh before anyone else could. She saw lots of bright lights and sunny days in her world.
Early Spring Water Cress and Cornbread was one of Mothers’ favorite meals.
1-2 pounds of the cresses, as she called them
a 6×6 inch piece of fat back or half a pound of bacon
2-3 T of vinegar
Slice the fat back into thin slices
place them in a hot iron skillet
fry them until brickle
Wash and pat dry your water cress and put it in a heat resistance bowl.
Pour the hot grease from the fatback over the greens then add the brickle meat pieces. Finally drizzle the vinegar over the mixture and toss until the greens are coated.
Southern Cornbread w/ Onions
2 cups of self-rising cornmeal mix
1/2 cup of self-rising flour
1 cup of milk
2 large eggs
1/4 cup vegetable oil
3 slices of bacon, cut in half
1/2 cup onions, chopped.
Mix cornmeal, flour, milk, eggs and vegetable oil together in a medium bowl until batter is almost cake like but do not beat it to much, you want some lumps in the batter.
In an iron skillet, lay in the bacon slices then sprinkle the onions on top. Pour the batter over the bacon and onions then place it in a preheated 375 degree oven. Bake until golden brown on top, about 30-35 minutes. Take it out of the oven and using a spoon, spread butter over the top. It will melt and make this good corn bread into a great cornbread. Yummy for your tummy!

To her, this meal brought back memories of her childhood in Scott County Virginia, recalling times when all her family was around her. Mother traveled through out her adult life but in her last days, she remembered her childhood and family, most of all.
